- 100g Membrillo (quince paste)
- 75g butter
- 75g golden powdered sugar
- ¼ tsp cinnamon
- good grated nutmeg
- some flour for dusting
- 375 g whole butter puff pastry
- 2 egg yolks, plus 1 for glazing
- 4 large persimmons
- Ice cream for serving (optional)
- Preheat the oven to 200°C/180°C fan/gas 6 and line a baking tray with baking paper.
- Place another baking sheet in the oven to heat.
- Put Membrillo, 50 g butter, 50 g sugar, cinnamon and nutmeg in a saucepan.
- Heat the ingredients until melted together, mashing the membrillo with the back of a spoon to break it up.
- Set the mixture aside to cool while you prepare the dough and persimmons.
- On a floured surface, roll out the dough to the thickness of a £1 coin.
- Using a sharp knife, cut out a circle about 12 inches in diameter.
- Transfer the dough to the baking sheet lined with parchment paper.
- Cut each persimmon into thin circles, revealing the central star.
- When the Membrillo mixture has cooled, stir in the egg yolks.
- Spread the mixture over the dough, leaving 1.5 cm around the edges.
- Layer the persimmon slices over the Membrillo base.
- Grate a little more nutmeg on top, sprinkle with the remaining butter and sprinkle with sugar.
- Fold in the edges of the dough to form a border and brush with the remaining egg yolk.
- Open the oven and carefully slide the galette onto the hot baking sheet.
- Bake for 40-45 minutes until the dough is crisp and golden brown and the persimmons are soft.
- Allow to cool for 10 minutes before serving with ice or serve cold at tea time.
