  • 125g chilled and diced butter
  • 125g lard
  • 500 g flour, plus a little more
  • 1 egg, beaten
  • 350 g beef fillet or beef steak, finely chopped
  • 1 large onion, finely chopped
  • 2 medium potatoes, peeled, thinly sliced
  • 175g beets, peeled, finely diced
  • 1 tbsp freshly ground black pepper

Preparation steps

  1. Using your fingertips or a food processor, rub the butter and lard into the flour with a pinch of salt and then stir in 6 tablespoons of cold water to form a firm dough. Cut evenly into four pieces and then chill for 20 minutes.
  2. Preheat the oven to 220°C/fan 200°C/gas 7. Mix the ingredients for the filling with 1 teaspoon of salt.
  3. Roll out each piece of dough on a lightly floured surface until large enough to form a circle about 9 inches (23 cm) in diameter. Use a plate to shape it.
  4. Pack a quarter of the filling tightly into the center of each round, leaving a border at either end.
