Peppers stuffed with halloumi

  • 4 large red peppers
  • 290 g jar of antipasti with marinated mushrooms
  • 50g couscous
  • 100 ml hot vegetable broth
  • 250g halloumi cheese, cut into cubes
  • 2 tsp chopped fresh parsley
  • mixed salad and garlic bread to serve

Preparation steps

  1. Preheat the oven to 200°C/gas 6/fan 180°C.
  2. Halve the peppers through the stem and scrape out the seeds.
  3. Place the peppers in a single layer on a baking sheet.
  4. Drain the mushrooms and reserve the oil from the jar.
  5. Drizzle a tablespoon of oil over the peppers.
  6. Sprinkle salt and pepper over the peppers.
  7. Bake for 20-25 minutes until the peppers are just tender.
  1. Place the couscous in a bowl.
  2. Pour in the hot broth.
  3. Leave on for 5 minutes.
  4. Fluff the couscous with a fork.
  5. Stir in mushrooms, halloumi and parsley.
  6. Season with salt and pepper.
  7. Pour the couscous mixture into the pepper halves.
  8. Place back in the oven for 15 minutes until the cheese is golden brown.
  1. Serve the peppers warm.
