Ingredients

  • 4 large red peppers
  • 290 g jar of antipasti with marinated mushrooms
  • 50g couscous
  • 100 ml hot vegetable broth
  • 250g halloumi cheese, cut into cubes
  • 2 tsp chopped fresh parsley
  • mixed salad and garlic bread to serve

Preparation steps

  1. Preheat the oven to 200°C/gas 6/fan 180°C.
  2. Halve the peppers through the stem and scrape out the seeds.
  3. Place the peppers in a single layer on a baking sheet.
  4. Drain the mushrooms and reserve the oil from the jar.
  5. Drizzle a tablespoon of oil over the peppers.
  6. Sprinkle salt and pepper over the peppers.
  7. Bake for 20-25 minutes until the peppers are just tender.

  3. Leave on for 5 minutes.
