Ingredients

  • 4 peppers, any color, tops removed and seeds removed
  • 2 tbsp olive oil
  • 1 red onion, finely chopped
  • 1 tsp ground cumin
  • 1 red chili pepper, deseeded and finely chopped or 1 teaspoon cayenne pepper
  • 2 zucchini, diced
  • 175g frozen sweetcorn
  • 1 avocado, diced
  • 50g vegetarian cheddar, grated
  • 2 tbsp chopped fresh coriander

Preparation steps

  1. Preheat the oven to 190°C/fan 170°C/gas. 5. Bring a large pot of water to the boil.
  2. Cook the peppers for 5 minutes.
  3. Remove the peppers and drain them, cut side down, on some kitchen paper.
  4. Heat 1 tablespoon of oil in a frying pan.
  5. Cook the onion for 3 minutes until soft.
  6. Add cumin and chili or cayenne pepper and cook for 2-3 minutes.
  7. Add the zucchini and cook until soft, 4 minutes.
  8. Remove from heat.
  9. Stir in sweetcorn, avocado, cheese, cilantro and spices.
  10. Put the filling in the peppers.
  11. Place the peppers in a baking dish.
  12. Drizzle with remaining oil.
  13. Bake for 30-35 minutes until the peppers are very soft.
  14. Let stand for about 5 minutes.
  15. Serve warm with sour cream, a chili bean salad and corn chips.
