  • 4 red peppers, deseeded and cut into large pieces
  • 3 tbsp olive oil
  • 2 x 300g packs of cherry vine tomatoes (or use smaller tomatoes and halve them)
  • 1 tsp cumin seeds
  • 100g fat green olives

Preparation steps


  1. Place the peppers in a medium roasting tray (or ovenproof skillet) and drizzle with 2 tablespoons oil.
  2. Season generously and then fry the chicken at 200°C/180°C fan/gas mark 6 for about 20 minutes until it is slightly softer.
  3. Place the tomato bunches between the peppers, sprinkle the cumin over them and drizzle with the remaining oil.
  4. Season again and then roast until the tomato skins have dissolved, about 10 minutes.
  5. Just before serving, fold in the olives.
  6. Can be made up to a day in advance and served cold or reheated in a hot oven for 5 minutes.
