Ingredients
- 4 red peppers, deseeded and cut into large pieces
- 3 tbsp olive oil
- 2 x 300g packs of cherry vine tomatoes (or use smaller tomatoes and halve them)
- 1 tsp cumin seeds
- 100g fat green olives
Preparation steps
method
- Place the peppers in a medium roasting tray (or ovenproof skillet) and drizzle with 2 tablespoons oil.
- Season generously and then fry the chicken at 200°C/180°C fan/gas mark 6 for about 20 minutes until it is slightly softer.
- Place the tomato bunches between the peppers, sprinkle the cumin over them and drizzle with the remaining oil.
- Season again and then roast until the tomato skins have dissolved, about 10 minutes.
- Just before serving, fold in the olives.
- Can be made up to a day in advance and served cold or reheated in a hot oven for 5 minutes.
