Pear and Manchego salad

  • 2 teaspoons olive oil, plus a dash for toasting the nuts
  • 2 tbsp blanched hazelnuts
  • Zest ¼ lemon
  • 1 tsp balsamic vinegar
  • 75g mixed leaves (we used red chicory, watercress and rocket)
  • 1 ripe pear, halved, cored and thinly sliced
  • 25g Manchego (or a vegetarian hard cheese)

Cut 2 slices Prosciutto cut into strips and wrap 4 breadsticks Grissini (or a gluten-free alternative).

Preparation steps

  1. Heat honey and rosemary in a small saucepan with 1 tablespoon of boiling water.
  2. Bring the honey-rosemary mixture to a boil and let it bubble for about 30 seconds.
  3. Remove the mixture from the heat and let it steep.
  4. Heat a frying pan and drizzle some oil into it.
  5. Add the hazelnuts to the pan and toast until they turn golden brown and begin to char.
  6. Remove the hazelnuts from the pan and let them cool.
  7. Roughly chop the hazelnuts to create a rustic crumb and mix with the lemon zest and some spices.
  8. To make a dressing, mix olive oil and balsamic vinegar with some spices.
  9. Toss the lettuce leaves with most of the dressing until well coated.
  10. Arrange the lettuce leaves on serving plates or a platter.
  11. Layer the lettuce leaves with the pear slices.
  12. Top the salad with grated Manchego cheese and hazelnut crumbs.
  13. Drizzle some rosemary honey and the remaining dressing over it.
  14. Serve the pear and Manchego salad with prosciutto twists (see tip below) for the meat eaters.
