Peach and almond tart

Ingredients

  • 500g pack of puff pastry
  • some flour for dusting
  • 3 ripe peaches, each cut into 6 wedges
  • Crème fraîche, for serving
  • 175g ground almonds
  • 50g toasted flaked almonds, plus a handful more to decorate
  • 250g can of mascarpone
  • 25 g butter, soft
  • 200g golden icing sugar, plus 1 tbsp for decorating
  • 2 eggs
  • ½ tsp almond extract

Try other fruits
Why not try strawberries or peaches in early summer, figs or grapes in late summer, pears and new walnuts in fall, and apples in winter? If possible, crack open the peach pits
Grab the peach stones inside and add them to the almonds while pulsing. They have a delicious bittersweet taste

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Roll out the dough on a floured surface until it is large enough to line a 9-inch tart pan with an overhang.
  3. Line the tin with dough and carefully fold the excess dough down the outside of the tin.
  4. Prick everything with a fork.
  5. Line with baking paper and place a 20cm sandwich tin on top, making sure it fits snugly.
  6. Fill with baking beans and then blind bake for 20-25 minutes until the edges are set.
  7. Remove the beans, can and paper and cook for another 10-15 minutes until golden brown, risen and crispy.
  8. Let the dough cool slightly, then trim off the excess and press down any risen pieces.
  9. Turn the oven down to 180°C/160°C fan/gas 4.
  10. Mix the ingredients for the filling and pour into the mold.
  11. Top with the peaches.
  12. Sprinkle with 1 tablespoon of powdered sugar and additional flaked almonds.
  13. Bake for 40 minutes, until the dough is risen, golden brown and slightly wobbly in the center.
  14. Allow the tart to cool to room temperature and serve with crème fraîche.
