  • 300g frozen peas
  • 3 tbsp olive oil
  • a handful of mint leaves
  • 2 eggs
  • 284 ml pot of double cream
  • 4 spring onions, finely chopped
  • 200g mild goat cheese, crumbled
  • 280g flour, plus some flour for dusting
  • 140g cold butter, cut into pieces

  1. Preheat the oven to 200°C/fan 180°C/gas 6. Follow steps 1 and 2 of the Sticky Onion Cheddar Quiche recipe on the opposite page.
  2. While the dough is cooling, cook the peas in boiling water for 3 minutes, then drain and refresh under cold water. Puree the peas with the olive oil with a hand blender, then stir in the chopped mint and season.
  3. Lightly prick the base of the cake with a fork, line the cake base with a large circle of baking paper or foil and then fill it with baking beans. Blind bake the tart for 20 minutes, remove the paper and beans, then continue baking for 5-10 minutes until biscuit brown.
  4. While the tart is cooking, beat the eggs in a large bowl. Gradually add the cream and stir in the onions. Season.
  5. When the dish is ready, spread the peas over the base with a spoon, pour the egg mixture over it and finally sprinkle the goat cheese on top. Bake for 20-25 minutes until set and golden brown.
  6. Allow to cool in the tin, cut off the edges of the dough, then remove and serve in slices.
