1. Nutrient-rich butternut squash
The main ingredient in this recipe is butternut squash, which is rich in essential vitamins and minerals. A 700g/1lb 9oz pumpkin provides a significant amount of vitamin A, vitamin C and vitamin E. Vitamin A is crucial for maintaining healthy vision, supporting the immune system and promoting the growth and repair of body tissues. Vitamin C is an antioxidant that supports collagen production, keeps skin healthy and fights harmful free radicals. Vitamin E also acts as an antioxidant and helps protect the body’s cells from damage.
2. Antioxidant powerhouse
Both butternut squash and red onions are rich in antioxidants. Antioxidants are compounds that protect the body from oxidative stress, which can lead to chronic diseases such as heart disease and cancer. These antioxidants neutralize harmful free radicals that arise during normal body processes or from environmental factors. Incorporating antioxidant-rich foods like roasted pumpkin and red onions into your diet can contribute to overall health and well-being.
3. Fiber content
This pasta dish offers a good source of fiber thanks to the addition of penne or rigatoni. Fiber is essential for maintaining a healthy digestive system and preventing constipation. It also helps regulate blood sugar levels, aids weight control, and promotes satiety, which can be beneficial for those who want to maintain weight or lose weight. Including fiber-rich foods in your meals can contribute to better overall gastrointestinal health.
4. Creamy and healthy
Adding crème fraîche to this recipe gives the pasta a creamy consistency without compromising healthiness. Crème fraîche is a type of fermented cream that contains fewer calories and fat compared to regular cream. It also offers a milder flavor, making it a versatile, guilt-free ingredient. In addition, crème fraîche is a good source of probiotics, which support healthy intestinal flora and can stimulate digestion.
