Pasta with roasted eggplant, tomatoes and basil

  • 1 large eggplant, cut into pieces
  • 2 tbsp olive oil
  • 2 thick cloves of garlic, unpeeled
  • 300g pack of cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 1 tsp powdered sugar
  • a handful of basil leaves and a little more for serving
  • 250g pasta such as penne or fusilli

Preparation steps

  4. In the meantime, cook the pasta and drain.
  5. When the vegetables are soft, remove the garlic cloves, cut off the ends and press the roasted garlic onto a board.
  6. Mash with a fork, then stir this garlic paste back into the vegetables with the basil leaves, mashing up most of the tomatoes.
  7. Add the cooked pasta and stir everything together in the roaster.
  8. Divide between two bowls and sprinkle with a few more basil leaves to serve.
