Pasta bake with sausage, ragu and spinach

Ingredients

  • 6 high-quality pork sausages (approx. 400 g), skinned
  • 680g jar of passata with garlic and herbs
  • 1 tbsp oregano, chopped (or 1 tsp dried)
  • 500g pack of pasta shapes
  • 400g pack of spinach
  • 2 x 350 g cups of ready-made cheese sauce (use a full-fat one to freeze)
  • Freshly grated nutmeg
  • 100g Parmesan, grated
  • 1 egg, beaten, for glazing

Preparation steps

  1. Heat a large frying pan and brown the sausages, breaking up the meat with a wooden spoon.
  2. Pour off the remaining fat from the pan, stir in the passata, bring to the boil, then add the oregano and season.
  3. Let simmer for 10 minutes.
  4. Cook the pasta for 2 minutes less than directed on the package, reserving some of the cooking water, then drain, cool under cold water and drain again.
  5. Meanwhile, pour a kettle of boiling water over the spinach in a colander to wilt it, then squeeze out all the water.
  6. Toss the pasta with the cheese sauce and some of the reserved water to loosen it up. Season.
  7. In a large bowl, add the meat sauce, then the spinach, some nutmeg and spices.
  8. Next add a third of the parmesan, the cheese noodles, more nutmeg and finally the rest of the cheese.
  9. Wrap and freeze.
  10. Allow to thaw at room temperature for about 8 hours.
  11. Preheat oven to 200°C/180°C fan/gas 6.
  12. Bake for 40-45 minutes until the dish is piping hot and golden brown.
