  • 50g desiccated coconut
  • 2 tbsp granulated white sugar
  • 1 egg white
  • 4 really ripe mangoes
  • 6 really ripe passion fruits, nicely wrinkled on the outside
  • Juice 1 lime
  • 2 gelatin sheets
  • 150 ml double cream
  • 2 large egg whites
  • 85g golden powdered sugar
  • 1 large egg white
  • 3 tbsp powdered sugar
  • 2 tbsp Malibu

Preparation steps

  1. First, prepare 8 glasses to serve your mousses and set them aside.
  2. In a bowl, combine coconut and granulated sugar. Finely chop the mixture with a hand blender.
  3. In another bowl, foam the egg whites with a fork.
  4. Dip the rim of each glass into the egg, shaking off any excess. Then dip the edge into the coconut mixture. Allow the rims to harden and dry.
  5. For the mousse, cut out all the flesh of the mangoes. Place the fruit in a blender or food processor.
  6. Add the passion fruit pulp and the lime juice to the mangoes in the blender. Blend the mixture until a smooth puree forms.
  7. Place a sieve over a large bowl and pour in the mango mixture to remove any passionfruit seeds.
  8. Soak the gelatin sheets by placing them in a bowl of cold water.
  9. Heat the cream in a small saucepan until it begins to bubble. Turn off the heating.
  10. Squeeze out the excess water from the soaked gelatine sheets and stir into the cream.
  11. Once the gelatine has completely melted and no streaks are visible, stir this mixture into the mango puree.
  12. In a separate bowl, beat the egg whites until stiff. Add the sugar and continue beating until a thick, glossy meringue forms.
  13. Using a large metal spoon or spatula, fold a little of the mango mixture into the meringue.
  14. Gently fold in the remaining mango mixture, making sure that all the meringue strips are gone and at the same time that as much air as possible remains in the mousse.
  15. Pour the mousse mixture into a jug and divide it evenly between the glasses.
  16. Place the jars in the refrigerator overnight to allow the mousse to set.
  17. To serve, beat the egg whites until stiff. Add the sugar and beat until the meringue becomes shiny and thick.
  18. Stir the Malibu into the meringue mixture.
  19. Pour the meringue mixture into a piping bag or food bag and cut off the corner.
  20. Pipe a dollop of meringue onto each mousse.
  21. If desired, you can make the meringue topping 1 hour ahead and refrigerate until needed.
