  • 350 g powdered sugar, plus an extra tablespoon for decorating the stars
  • 568 ml pot of double cream
  • 284 ml pot of double cream
  • 8 ripe passion fruits (watch out for wrinkled ones)
  • 2 tbsp lime juice
  • 100 g butter, soft
  • 140g flour, plus some flour for dusting
  • 85g ground rice
  • 85g desiccated coconut
  • 2 egg yolks
  • ¼ tsp vanilla extract


Transport the pudding
Wrap the cookies carefully and layer them with a greaseproof layer

and whole passion fruit. Serve as in step 4.

Preparation steps

  1. Mix 125g sugar with all the cream in a heavy-based saucepan.
  2. Heat gently, stirring occasionally, until all the sugar has dissolved.
  3. Bring the mixture to a boil and cook vigorously for 3 minutes, stirring to prevent the mixture from bubbling or sticking.
  4. Remove the pot from the heat immediately.
  5. Blend the pulp of 7 passion fruits in a food processor to separate the seeds from the juice.
  6. Strain the juice and stir it into the cream along with the lime juice.
  7. The mixture should visibly thicken.
  8. Allow the mixture to cool for 10 minutes.
  9. Pour the mixture into 10 small pots or cups.
  10. Arrange the cups on a tray that will fit in your refrigerator.
  11. Cover the tray with cling film, making sure it does not touch the surface of the cream.
  12. Refrigerate the pots for 3 hours or up to a day in advance to firm up.
  13. In the meantime, preheat the oven to 180°C/fan 160°C/gas mark 4.
  14. In a large bowl, mix butter, flour, ground rice, 50g coconut, egg yolks, vanilla and the remaining 225g sugar until a dough forms.
  15. Roll out the dough on a lightly floured surface.
  16. Cut out cookies with star-shaped cookie cutters.
  17. Spread the cookies on baking sheets lined with baking paper.
  18. Sprinkle remaining coconut and sugar over cookies.
  19. Bake the cookies for 8-10 minutes.
  20. Allow the cookies to cool.
  21. To serve, scoop out the flesh of the last passion fruit and drizzle some over each pot.
  22. Arrange the coconut stars next to it.
