  • 150 ml sunflower oil, plus a little extra for the can
  • 300g self-raising flour
  • 1 tsp ground cinnamon
  • 1 teaspoon Baking powder
  • 300g powdered sugar
  • 50g desiccated coconut
  • 2 eggs, plus 2 egg whites, whole eggs beaten
  • 2 overripe bananas, mashed
  • 140g carrots, grated
  • 432 g canned chopped pineapple in the juice, drain in a sieve, collecting the juice (or briefly stir up a can of pineapple chunks and then pour through a sieve)
  • 100 ml milk
  • 4 ripe passion fruits, halved
  • 25g powdered sugar
  • 200g can of soft cheese
  • 100 g soft butter
  • 85g powdered sugar
  • 1 tsp vanilla extract

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Oil the bottom of a 3 x 20 cm sandwich tin and line it with baking paper.
  3. Mix the flour, cinnamon, baking powder, half the sugar and the coconut in a large mixing bowl.
  4. In another bowl, mix the beaten eggs, mashed bananas, grated carrots, drained mashed pineapple, milk and oil.
  5. Beat the egg whites until stiff, then add the remaining sugar and beat again until stiff and shiny.
  6. Stir the wet mixture into the dry mixture until smooth and lump-free.
  7. Using a large metal spoon or spatula, fold in the egg white mixture.
  8. Divide the dough evenly between the tins and bake for 25 minutes, until risen and a skewer comes out clean.
  9. You may need to swap the positions of the cans after 20 minutes.
  10. To make the drizzle, spoon out the passion fruit pulp and place it in a small pot.
  11. Add the pineapple juice and powdered sugar and heat until bubbles form, then bubble until a syrupy consistency is formed.
  12. For the glaze, beat the cheese and butter until there are no lumps.
  13. Then stir in the powdered sugar and vanilla.
  14. Chill the glaze until ready to assemble.
  15. Pierce the cakes all over with a skewer, drizzle most of the passion syrup over them and let them cool.
  16. After cooling, spread the icing over two sponge cake bases.
  17. Place the two ice-cold sponge cake bases together and cover them with the third, non-ice-cold sponge cake dough.
  18. Drizzle the remaining syrup over it.
