- 4 oven-ready partridge
- olive oil
- 250 ml dry apple cider
- 2 tbsp clear honey
- 200 ml chicken broth
- 1 butternut squash, peeled and cut into 2½ cm pieces
- some thyme sprigs, leaves stripped
- Using strong kitchen scissors or poultry shears, cut the backbone out of one of the partridges.
- Turn the bird over, then use your body weight to press the center of the breast with the heel of your hand until the partridge flattens. Repeat.
- Heat some oil in a large non-stick pan.
- Season the birds with salt and pepper, then quickly brown them in the pan, two at a time.
- Remove and set aside.

- Now toss the partridges into the rest of the cider mixture.

- Place the partridges between the pumpkin, breast side up.
- Sprinkle with a little more thyme.
- Roast for 15 minutes, then remove the birds and let them rest.
- Turn off the oven and keep the pumpkin warm.
- Quarter the birds and serve on a pile of pumpkin.
- To serve, drizzle some sauce over the top and sprinkle with some thyme.
