Partridge with honey and black pepper and roasted pumpkin

Ingredients

  • 4 oven-ready partridge
  • olive oil
  • 250 ml dry apple cider
  • 2 tbsp clear honey
  • 200 ml chicken broth
  • 1 butternut squash, peeled and cut into 2½ cm pieces
  • some thyme sprigs, leaves stripped

Preparation steps

  1. Using strong kitchen scissors or poultry shears, cut the backbone out of one of the partridges.
  2. Turn the bird over, then use your body weight to press the center of the breast with the heel of your hand until the partridge flattens. Repeat.
  3. Heat some oil in a large non-stick pan.
  4. Season the birds with salt and pepper, then quickly brown them in the pan, two at a time.
  5. Remove and set aside.
  6. Mix the apple cider with the honey, reserving a third of the mixture and adding the rest to the pan to deglaze.
  7. Stir in the stock and then reduce the liquid for 5 minutes until a syrupy sauce forms.
  8. Season to taste.
  9. Preheat oven to 220°C/200°C fan/gas 7.
  10. Place the squash in a mixing bowl and toss with most of the thyme, spices, some apple cider mixture and 1 tablespoon olive oil.
  11. Place on a nonstick baking sheet and roast for 30 minutes.
  12. Now toss the partridges into the rest of the cider mixture.
  13. Grind plenty of black pepper over it and sprinkle with a good pinch of salt.
  14. Place the partridges between the pumpkin, breast side up.
  15. Sprinkle with a little more thyme.
  16. Roast for 15 minutes, then remove the birds and let them rest.
  17. Turn off the oven and keep the pumpkin warm.
  18. Quarter the birds and serve on a pile of pumpkin.
  19. To serve, drizzle some sauce over the top and sprinkle with some thyme.
