Ingredients

  • 500g parsnips
  • 1 tbsp flour
  • 1 tbsp honey
  • 2 tbsp sunflower oil
  • 2 tbsp butter

Tip

Twists: thyme and sesame

Place 3 sprigs of thyme and 3 cloves of unpeeled garlic around the parsnips in the roasting pan and sprinkle 2 tablespoons of sesame seeds over them. Cook as above. When the parsnips are roasted, press in the roasted garlic and remove the thyme. Scatter over the leaves of 3 thyme sprigs and drizzle 2 tablespoons tahini with 1 tablespoon water over them before serving.

Twists: Parmesan and pumpkin seeds

Crush 25 g pumpkin seeds into a coarse powder using a pestle and mortar. Mix with 50g grated Parmesan and season well. When the parsnips have baked for 30 minutes, top with the Parmesan mixture and place in the oven for another 10 minutes.

Variations: poppy and quince

Halfway through the roasting time, spread 50 g of quince paste around the parsnips. 5 minutes before the end of cooking, sprinkle 2 teaspoons of poppy seeds on top.

Preparation steps

  1. Cover the parsnips with the head and tail and cut the larger parsnips in half lengthwise.
  2. Place the parsnips in a large pot and cover with salted water.
  3. Bring the water to a boil and cook the parsnips for 5 minutes.
  4. Drain the parsnips in a colander and let them steam dry for a few minutes.
  5. Preheat the oven to 190°C/170°C fan/gas 5.
  6. Sprinkle flour and honey over the parsnips.
  7. Turn the parsnips so they are evenly coated.
  8. Place the breaded parsnips in a roasting pan.
  9. Add sunflower oil, butter and spices to the roaster.
  10. Roast the parsnips for 40 minutes, turning halfway through, until they turn golden brown.
