  • 3 x 250g/9oz cups of ricotta
  • 2 eggs
  • 100g Parmesan (or vegetarian alternative), finely grated
  • 4 large tomatoes – a mix of colors looks good
  • Handful of good quality black olives, pitted
  • 2 tbsp olive oil
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • ¼ tsp powdered sugar
  • 1 garlic clove, crushed
  • small bunch of basil, leaves only

Preparation steps

  1. Preheat oven to 200°C/180°C fan/gas 6.
  2. Mix the ricotta and eggs, fold in most of the Parmesan and season to taste.
  3. Line a 900g loaf tin with baking paper and pour the ricotta into the tin.
  4. Smooth the top, sprinkle with the remaining cheese, then bake for 35 minutes, until firm and golden brown.
  5. Allow to cool, then remove.
  6. You can do this a day in advance.
  7. Cut the tomatoes into fairly thick slices, then chop the olives very roughly.
  8. Mix olive oil, vinegar, sugar, garlic, olives and spices.
  9. Shortly before serving, roughly chop a few basil leaves and stir the majority into the dressing.
  10. To serve, cut the ricotta into slices and arrange on plates.
  11. Mix the tomatoes with most of the basil and a little dressing.
  12. Serve with the ricotta, drizzle with the dressing and sprinkle with the remaining basil.
