Ingredients
- 3 x 250g/9oz cups of ricotta
- 2 eggs
- 100g Parmesan (or vegetarian alternative), finely grated
- 4 large tomatoes – a mix of colors looks good
- Handful of good quality black olives, pitted
- 2 tbsp olive oil
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- ¼ tsp powdered sugar
- 1 garlic clove, crushed
- small bunch of basil, leaves only
Preparation steps
- Preheat oven to 200°C/180°C fan/gas 6.
- Mix the ricotta and eggs, fold in most of the Parmesan and season to taste.
- Line a 900g loaf tin with baking paper and pour the ricotta into the tin.
- Smooth the top, sprinkle with the remaining cheese, then bake for 35 minutes, until firm and golden brown.
- Allow to cool, then remove.
- You can do this a day in advance.
- Cut the tomatoes into fairly thick slices, then chop the olives very roughly.
- Mix olive oil, vinegar, sugar, garlic, olives and spices.
- Shortly before serving, roughly chop a few basil leaves and stir the majority into the dressing.
- To serve, cut the ricotta into slices and arrange on plates.
- Mix the tomatoes with most of the basil and a little dressing.
- Serve with the ricotta, drizzle with the dressing and sprinkle with the remaining basil.
