Ingredients
- 200g butter, plus a little butter for greasing
- 1 large egg
- 4 tablespoons of milk
- 200g golden syrup
- 85g syrup
- 85g light soft brown sugar
- 100 g medium oat flakes
- 250g self-raising flour
- 1 tbsp ground ginger
Preparation steps
- Preheat the oven to 160°C/140°C fan/gas 3.
- Grease and line a deep square cake tin (22cm/9in) with baking paper.
- Mix egg and milk with a fork.
- Gently melt syrup, syrup, sugar and butter in a large saucepan until sugar is dissolved. Remove from heat.
- Mix the oats, flour and ginger and stir into the syrup mixture, followed by the egg and milk.
- Pour the mixture into the pan and bake for 50 minutes to 1 hour, until the cake feels set and slightly crispy on top.
- Allow to cool in the tin, then wrap in more parchment and foil and store for 3-5 days before eating if possible – it will become softer and stickier the longer you leave it, up to 2 weeks.
