- 300g nuts, roasted and chopped (we used pistachios and hazelnuts)
- 50 g candied peel, finely chopped
- 250g dried fruit, chopped (we used dates and apricots)
- 50g plain flour
- 2 tsp spices (we used 1 tsp cinnamon, ¾ tsp ginger and ¼ tsp cardamom)
- 125g honey
- 150g golden powdered sugar
- 3 tablespoons fortified wine or liqueur (we used Marsala)
- Powdered sugar, for dusting
- Preheat the oven to 150°C/130°C fan/gas 2.
- Grease the bottom of a 20cm springform pan and line it with edible rice paper or baking paper.
- Place nuts, candied peel and dried fruits in a bowl.
- Sift the flour and spices over it and mix.
- Heat honey, sugar and wine in a medium saucepan over medium heat.
- Let it bubble for 3-4 minutes until the sugar has melted.
- Pour the hot liquid over the fruits and nuts and mix.
- Scrape the mixture into the mold and flatten it with the back of a wet metal spoon.
- Bake for 35-40 minutes until the top is still soft but not sticky – it will firm up as it cools.
- Allow to cool in the tin for 10 minutes, then remove with a spatula to loosen any sticky edges.
- If using parchment paper, peel it off and discard it; The edible rice paper can be left on top.
- Allow to cool completely on a wire rack, then dust generously with powdered sugar and gently rub the sugar into the surface.
- Cut into wedges to serve.
- Will keep in an airtight container wrapped in baking paper for a month.
