Ingredients
- ½ tsp cumin seeds
- 1 green chili pepper, chopped and deseeded
- 3cm piece of fresh ginger root, peeled and chopped
- 150g cup of Greek yogurt
- 1 teaspoon light muscovado sugar
- ½ tsp garam masala
- 2 tbsp chopped fresh coriander leaves and stems
- Juice of half a lime
- 3 tbsp tomato paste
- 250g frozen peas
- 227g package paneer, cut into 1cm cubes
- 2-3 firm red tomatoes, cut into wedges
- a handful of roasted cashews, chopped, to serve
Preparation steps
- Toast the cumin seeds in a heavy skillet until darkened – about 30 seconds.
- Roughly crush the roasted cumin seeds with a rolling pin.
- Place the crushed cumin seeds in a blender.
- Add the chilli, ginger, yoghurt, sugar, garam masala, coriander, lime juice, tomato puree and 200 ml water to the blender.
- Blend the mixture until smooth.
- Pour the sauce into a pot.
- Cook the sauce in the pot for 5 minutes, stirring frequently.
- Add the peas to the pot.
- Simmer the sauce with the peas for 3-5 minutes, or until the peas are almost cooked.
- Add paneer and tomato to the pot.
- Heat the sauce with paneer and tomato for 2-3 minutes.
- Sprinkle the dish with cashew nuts.
