  • 200g pack of smoked pancetta slices
  • 4 boneless chicken breast fillets
  • 12 fresh sage leaves
  • 1 tbsp olive oil
  • 4 small stalks of tomatoes on a stem

Preparation steps

  1. Arrange a quarter of the pancetta slices in a row on a board, slightly overlapping the long sides.
  2. Place a chicken breast at one end so it is over the pancetta slices.
  3. Cover the chicken breast with three sage leaves.
  4. Sprinkle with some sea salt and freshly ground black pepper.
  5. Wrap the chicken in the pancetta so that it is completely enclosed.
  6. Repeat the previous steps to create a total of four parcels.
  7. Place the oil in a large, heavy skillet, such as a cast iron sauté pan or roasting pan.
  8. Place the pan on the grill and heat until hot, 1-2 minutes.
  9. Place the chicken pieces in the pan and fry for 7-8 minutes on each side until the pancetta is golden brown and crispy.
  10. Remove the packets from the pan.
  11. Place the tomatoes in the pan and shake them to coat them with the cooking juices.
  12. Heat the tomatoes for a few minutes.
  13. Add the chicken parcels back to the pan.
  14. Remove the pan from the heat and let the chicken rest for about 10 minutes so that it becomes tender and easier to cut.

Health Benefits of Pancetta Chicken Wraps

Pancetta Chicken Wraps combine the delicious flavors of smoked pancetta slices, tender chicken breast fillets, fresh sage leaves and juicy tomatoes. These wraps not only make for a delicious and filling meal but also offer various health benefits. Let’s explore the nutritional benefits of these ingredients:

1. Chicken breast fillets

Chicken breast fillets are a great source of lean protein, making them an excellent choice for anyone looking to maintain muscle mass or promote weight loss. They are low in fat, especially saturated fat, which can lead to heart disease if consumed in excess. Chicken breast fillets also provide important vitamins and minerals such as vitamin B6, vitamin B3 and selenium.

2. Smoked pancetta slices

While pancetta is a form of bacon, it has a slightly different flavor profile and is typically made from pork belly meat that is salt-cured rather than smoked. Although pancetta slices contain some fat, they can add flavor to your chicken wraps. Remember to consume them in moderation as excessive saturated fat intake can increase the risk of certain health conditions.

3. Fresh sage leaves

Sage is an herb known for its distinct aroma and flavor. It is rich in antioxidants that help neutralize harmful free radicals in the body and protect against damage caused by oxidative stress. Additionally, sage is associated with potential anti-inflammatory properties and may support brain health by improving memory and cognitive function.

4. Tomatoes on the vine

Vine tomatoes are an excellent source of vitamins A, C and E, as well as antioxidants such as lycopene. Lycopene has been linked to a reduced risk of certain cancers, including prostate and lung cancer. Tomatoes are also low in calories and high in fiber, which aids digestion and promotes satiety.

When combined, these ingredients create a flavorful and nutritious meal that can be enjoyed by those seeking a balanced diet. Remember to consider portion sizes and balance your overall nutrient intake to ensure you are meeting your individual nutritional needs.
