Ingredients

  • 200g pack of smoked pancetta slices
  • 4 boneless chicken breast fillets
  • 12 fresh sage leaves
  • 1 tbsp olive oil
  • 4 small stalks of tomatoes on a stem

  1. Arrange a quarter of the pancetta slices in a row on a board, slightly overlapping the long sides.
  2. Place a chicken breast at one end so it is over the pancetta slices.
  3. Cover the chicken breast with three sage leaves.
  4. Sprinkle with some sea salt and freshly ground black pepper.
  5. Wrap the chicken in the pancetta so that it is completely enclosed.
  6. Repeat the previous steps to create a total of four parcels.
  7. Place the oil in a large, heavy skillet, such as a cast iron sauté pan or roasting pan.
  8. Place the pan on the grill and heat until hot, 1-2 minutes.
  9. Place the chicken pieces in the pan and fry for 7-8 minutes on each side until the pancetta is golden brown and crispy.
  10. Remove the packets from the pan.
  11. Place the tomatoes in the pan and shake them to coat them with the cooking juices.
  12. Heat the tomatoes for a few minutes.
  13. Add the chicken parcels back to the pan.
  14. Remove the pan from the heat and let the chicken rest for about 10 minutes so that it becomes tender and easier to cut.
