- 25g pack of dried porcini mushrooms
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 2 teaspoons thyme leaves, plus extra for serving
- 350g risotto rice
- 750 ml hot vegetable stock
- 100 ml white wine
- To serve, a handful of grated Parmesan (or a vegetarian alternative) plus shavings
- Place the mushrooms in a bowl, pour 425 ml of boiling water over them and let them soak for 10 minutes.
- Meanwhile, heat the oil in an ovenproof pan and fry the onion for 2 minutes until softened. Add the garlic and cook for another minute.
- Preheat the oven to 190°C/fan 170°C/gas 5.
- Drain the mushrooms, reserving the liquid and chop.
- Add mushrooms, thyme and rice to the pan and stir well.
- Strain the mushroom liquid, pour in the stock and wine and bring to the boil.
- Season to taste, cover and bake for 25 minutes, until the rice is just cooked through and has absorbed all the liquid.
