  • 1.2kg potatoes, cut into 4cm pieces
  • 2 oregano sprigs, leaves stripped
  • Zest 1 lemon
  • 2 tbsp olive oil

Quarter any remaining fried potatoes and
Mix with 1 teaspoon olive oil on a baking sheet.
Roast at 200°C/fan 180°C/gas 6 for 15 minutes
until it is crispy. In the meantime, stir in 1 tablespoon of balsamic vinegar
Vinegar with 1 teaspoon whole grain mustard and
1 tsp clear honey. Cool the potatoes
Simmer for 1 minute, then mix with 4 handfuls
Favorite leaves or salad and the dressing.

Preparation steps

  1. Preheat the oven to 150°C/fan 130°C/gas 2.
  2. In a large pot, cook the potatoes in a large pot of water for 3 minutes.
  3. Drain the potatoes well and place them on a large baking tray.
  4. Mix the potatoes with oregano, lemon zest, olive oil and spices.
  5. Place the potatoes in the preheated oven for 15 minutes.
  6. If you are cooking the lamb along with the potatoes, this should be the last 15 minutes of the lamb’s cooking time.
  7. After 15 minutes, increase the heat to 220°C/fan 200°C/gas 7.
  8. Roast the potatoes for another 20 minutes, turning once, until golden brown and crispy.
