Ingredients
- 1.2kg potatoes, cut into 4cm pieces
- 2 oregano sprigs, leaves stripped
- Zest 1 lemon
- 2 tbsp olive oil

Roast at 200°C/fan 180°C/gas 6 for 15 minutes

- Preheat the oven to 150°C/fan 130°C/gas 2.
- In a large pot, cook the potatoes in a large pot of water for 3 minutes.
- Drain the potatoes well and place them on a large baking tray.
- Mix the potatoes with oregano, lemon zest, olive oil and spices.
- Place the potatoes in the preheated oven for 15 minutes.
- If you are cooking the lamb along with the potatoes, this should be the last 15 minutes of the lamb’s cooking time.
- After 15 minutes, increase the heat to 220°C/fan 200°C/gas 7.
- Roast the potatoes for another 20 minutes, turning once, until golden brown and crispy.
