Ingredients

  • 284 ml pot of double cream
  • Peel from 1 orange
  • 225g powdered sugar
  • 4 tbsp orange liqueur
  • 200 g canned cream cheese
  • 4 eggs
  • 250g digestive biscuits
  • 85g butter, melted
  • 100g powdered sugar
  • sunflower oil

Preparation steps

  1. Preheat the oven to 150°C/fan 130°C/gas 2.
  2. Bring the cream and orange peel to the boil in a small saucepan and set aside to steep.
  3. Place 140g/5oz sugar in another saucepan and add just enough water to make it mushy.
  4. Bring to a boil, then reduce heat and simmer until a dark caramel forms.
  5. Add 2 tablespoons of orange liqueur (be careful that it splashes).
  6. Let it rest for a bit, then pour the caramel over the bottom of 6 x 250ml ramekins and set aside.
  7. Mix the cream cheese and the remaining 85 g sugar in a large bowl.
  8. Stir in the eggs and the remaining orange liqueur.
  9. Strain the infused cream and mix everything into a vanilla sauce.
  10. Skim off any foam and set aside.
  11. Bring the kettle to a boil.
  12. Place the ramekins in a deep roasting pan.
  13. Divide the vanilla pudding among each other – it’s only enough to reach half of it.
  14. Place the dish in the oven and fill with hot water from the kettle, coming halfway up the outside of the ramekins.
  15. Bake the cheesecakes for 40 minutes or until just set.
  16. Remove from oven and mold. Allow to cool, then refrigerate at least overnight.
  17. These can be made up to 2 days in advance and refrigerated.
  18. Prepare the bases up to 2 days before serving.
  19. Crumble the cookies in a food processor and then chop them into fine crumbs.
  20. Add the melted butter and pulse until combined.
  21. Line a flat baking tray with baking paper and spread the basic mixture on it.
  22. Cover with another sheet of baking paper.
  23. Gently roll out the mixture until it is large enough to cut out 6 ramekin-sized layers.
  24. Cool.
  25. To make the caramel curls, heat the sugar with a little water in a pot and let it caramelize.
  26. Allow to cool slightly.
  27. Line a tray with baking paper and grease with a little oil.
  28. Drizzle the caramel up and down so that all the caramel strands stick together to form stars.
  29. Allow to harden.
  30. To serve, cut out 6 bases from the cookie mixture using a cookie cutter with the same diameter as the ramekins.
  31. Remove the bases to 6 plates.
  32. Remove the cheesecakes from the mold and reserve the caramel sauce in the baking dish.
  33. Cover the bases with the caramel cream and drizzle the sauce over and around the plates.
  34. Garnish with a star and serve.
