Ingredients

  • 60g butter
  • 1 large onion, finely chopped
  • 2 sprigs of thyme, leaves picked

  • 300g risotto rice
  • 1½ l hot chicken broth
  • 200g cooked chicken, cut into pieces
  • 50g grated Parmesan, plus some Parmesan for serving (optional)
  • small packet of parsley, finely chopped

  5. When most of the broth has been absorbed and the rice is almost cooked, add the chicken and stir until warm.
  6. Season well and stir in the Parmesan and parsley.
  7. Serve sprinkled with additional Parmesan if desired.
