One-pot risotto with chicken and mushrooms

  • 60g butter
  • 1 large onion, finely chopped
  • 2 sprigs of thyme, leaves picked
  • 250g pack of chestnut mushrooms, sliced
  • 300g risotto rice
  • 1½ l hot chicken broth
  • 200g cooked chicken, cut into pieces
  • 50g grated Parmesan, plus some Parmesan for serving (optional)
  • small packet of parsley, finely chopped

Preparation steps

  1. Heat the butter in a large skillet over low heat and add the onion.
  2. Cook for 10 minutes until softened, then stir in the thyme leaves and mushrooms.
  3. Cook for 5 minutes, sprinkle over the rice and stir until the mixture is coated.
  4. Add a quarter of the stock and continue cooking, stirring occasionally and adding more stock as it is absorbed (you may not need all of the stock).
  5. When most of the broth has been absorbed and the rice is almost cooked, add the chicken and stir until warm.
  6. Season well and stir in the Parmesan and parsley.
  7. Serve sprinkled with additional Parmesan if desired.
