Ingredients
- 1 tbsp sunflower oil
- 1 carrot, thinly grated
- 120g package shiitake mushrooms, stems removed and thinly sliced
- 100g bag of bean sprouts
- 3 spring onions, thinly sliced
- Piece of ginger, peeled and finely grated
- 1 clove garlic, chopped or grated
- soy sauce
- 3 eggs beaten with 1 teaspoon sunflower oil
Preparation steps
- Heat the oil in a wok and fry the carrot and mushrooms for 2 minutes until they just start to soften.
- Add the bean sprouts, onions, ginger and garlic and fry for another 1-2 minutes until the bean sprouts start to turn translucent.
- Season with the soy sauce and set aside. Can be prepared up to 4 hours in advance.
- Heat a medium sized frying pan, add some oil and pour out the excess oil.
- Pour in some egg and swirl it around the pan to form a thin, even layer.
- Cook for 30 seconds or until edges turn golden brown, then flip with a spatula for another 10 seconds.
- Place on baking paper and repeat until six pancakes are baked.
- Can be prepared up to a day in advance.
- Cut each pancake in half.
- Place some of the vegetable mixture in the center of the crescent-shaped pancake and roll it up, folding in the edges.
- Steam briefly to warm the rolls just before serving, or microwave on high for 30 seconds.
