Nutty Baklava

Ingredients

  • 200g butter, plus a little butter for greasing
  • 200g pistachios
  • 50g walnuts
  • 50g pecans
  • 3 tbsp honey
  • 2 x 270g pack of filo dough
  • 250g golden powdered sugar
  • 50g honey
  • 2 tsp orange blossom water
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom (from 3 pods)

Tip

Choose your own nuts

We used a mix of pistachios, pecans and walnuts, but you can try using just one variety as long as you use 300g total.

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/Gas 4 and grease a 21cm x 21cm square cake tin with butter.
  2. Using a food processor, chop the nuts into small pieces, being careful not to let them turn into a paste.
  3. Place the chopped nuts in a bowl, stir in the honey and a pinch of salt and set aside.
  4. Melt the butter in a pan over low heat.
  5. Cut the first pack of filo pastry sheets in half to fit the tin.
  6. Place a sheet of filo dough in the mold and brush with the melted butter.
  7. Place another tray on top and brush with butter again.
  8. Continue layering the filo pastry sheets, brushing each sheet with butter, until the entire package is used up.
  9. Spread the honey-nut mixture over the dough and press it down lightly with the back of a spoon.
  10. Open the other package of phyllo dough, cut it in half, and continue the layering and buttering process.
  11. Finally, when you reach the last sheet, pour the remaining butter over it.
  12. Using a sharp knife, cut deep lines into the dough to form either squares or diamonds.
  13. Bake in the oven for 20 minutes.
  14. Reduce the heat to 150°C/130°C fan/gas 2 and bake for a further 45 minutes.
  15. While the baklava is cooking, put all the syrup ingredients in a saucepan and add 200ml water.
  16. Heat gently until the sugar is dissolved, then let the mixture cook for 8-10 minutes or until it reaches the consistency of liquid honey.
  17. When the baklava comes out of the oven, pour the warm syrup over it and let it run into the lines you cut.
  18. Let it sit and serve when completely cool.
