Ingredients

  • 200g basmati rice
  • 1 tbsp sunflower oil
  • 1 large onion, peeled and chopped
  • 2 garlic cloves, peeled and sliced
  • 1 thumb-sized piece of ginger, peeled and chopped
  • 2 whole cloves
  • 1 cinnamon stick
  • 2 cardamom pods, cracked
  • 1½ tsp medium curry powder
  • 50g frozen peas
  • 50g frozen sweetcorn
  • 50 g flaked almonds (optional)
  • 375 ml stock (1 bouillon cube dissolved in 375 ml boiling water)

Preparation steps

  1. Preheat the oven to 180°C/fan 160°C/gas mark 4.
  2. Rinse the rice and soak for 10 minutes.
  3. Heat a large, ovenproof pot.
  4. Add oil to the pot.
  5. Next, add the onion, garlic and ginger to the pot.
  6. Cook onion, garlic and ginger over low heat until onion is soft.
  7. Add cloves, cinnamon and cardamom pods to the pot.
  8. Cook the spices over low heat for another 2 minutes.
  9. Stir in the curry powder and cook for another 2 minutes.
  10. Drain the soaked rice and add it to the pot.
  11. Stir the rice to coat it with oil and spices.
  12. Add the peas, corn and half of the flaked almonds to the pot.
  13. Pour the broth into the pan and stir well.
  14. Cover the pot with a lid or foil.
  15. Cook the rice in the oven for 15-20 minutes.
  16. Remove the pot from the oven.
  17. Sprinkle the remaining almonds (if using) over the rice.
  18. Serve and enjoy!
