  • 1.2 kg ripe tomatoes of your choice (we like plums), halved
  • 6 garlic cloves, sliced
  • ½ red chili pepper, sliced ​​(optional)
  • 30g golden powdered sugar
  • 1 teaspoon dried oregano
  • 100 ml red wine vinegar
  • 100 ml olive oil
  • 1 large bunch of basil
  • 2 onions, sliced
  • 400 ml vegetable broth
  • 200g white bread, sourdough or other whole bread (slightly stale bread works well), crust removed
  • 2 tbsp olive oil
  • 10g Parmesan or vegetarian alternative, finely grated (optional)

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6.
  2. Line a large, shallow roasting tin with baking paper.
  3. Arrange the tomatoes cut side up in the can.

  8. If you want to make croutons, tear the bread into small pieces and place them on a baking sheet.
  9. Drizzle 2 tablespoons of olive oil over the bread and sprinkle with Parmesan cheese if desired.
  10. Bake the croutons with the tomatoes for 20-25 minutes, tossing a few times, until golden brown and crispy.
  11. Set the croutons aside to cool. They will keep for a day in an airtight container.
  12. Set aside a large handful of basil leaves, reserving the stems and remaining branches.
  13. Heat another 2 tablespoons olive oil in a pot or skillet over medium-low heat.
  14. Cook the onions with a little salt for 20 minutes until they are soft and sticky.
  15. Stir in the remaining sugar and pour the remaining vinegar over it.

  22. If desired, strain the soup through a sieve to obtain an even smoother consistency.
