Ingredients
- 1.2 kg ripe tomatoes of your choice (we like plums), halved

- 200g white bread, sourdough or other whole bread (slightly stale bread works well), crust removed
- 2 tbsp olive oil
- 10g Parmesan or vegetarian alternative, finely grated (optional)
Preparation steps
- Preheat the oven to 200°C/180°C fan/gas 6.
- Line a large, shallow roasting tin with baking paper.
- Arrange the tomatoes cut side up in the can.
- Season the tomatoes generously with salt.
- Scatter the garlic, chilli (if using), 1 teaspoon sugar and oregano over the tomatoes.

- If you want to make croutons, tear the bread into small pieces and place them on a baking sheet.
- Drizzle 2 tablespoons of olive oil over the bread and sprinkle with Parmesan cheese if desired.
- Bake the croutons with the tomatoes for 20-25 minutes, tossing a few times, until golden brown and crispy.
- Set the croutons aside to cool. They will keep for a day in an airtight container.
- Set aside a large handful of basil leaves, reserving the stems and remaining branches.
- Heat another 2 tablespoons olive oil in a pot or skillet over medium-low heat.
- Cook the onions with a little salt for 20 minutes until they are soft and sticky.
- Stir in the remaining sugar and pour the remaining vinegar over it.
- Bring the mixture to a boil, then simmer for 3-5 minutes, until the onions are slightly broken down and the liquid is syrupy.

- Stir well and bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, until the tomatoes have broken down into a chunky sauce.
- Remove the mixture from the heat and let it cool slightly.
- Place everything in a food processor or blender and puree until the soup is as smooth as desired.
- If desired, strain the soup through a sieve to obtain an even smoother consistency.
- Once completely cooled, the soup can be stored in a non-metal, airtight container refrigerated for up to three days or frozen for up to three months.
- Crush the reserved basil leaves in a mortar with a pinch of salt.
