Ingredients

  • 500g pack of sweet shortcrust pastry
  • flour, for dusting
  • 75g butter, softened
  • 100g golden powdered sugar
  • 175g golden syrup
  • 175g maple syrup
  • 3 eggs, beaten
  • ½ tsp vanilla extract
  • 300 g pecan halves
  • Double cream, whipped, for serving

  1. Roll out the dough on a lightly floured surface and line a 9-inch tart pan. Save any leftover dough in case you need to fill any cracks after blind baking.
  2. Prick the base with a fork and chill for 30 minutes or until firm.
  3. Preheat the oven to 190°C/170°C fan/gas 5.
  4. Line the dough base with baking paper, fill with baking beans and bake for 15-20 minutes until the edges are firm.
  5. Remove the beans and baking paper and place in the oven for 5-10 minutes until the base is set and the dough is golden brown. Let cool down.
  6. Increase the oven to 200°C/190°C fan/gas 6.
  7. Beat butter and sugar with an electric whisk until fluffy.
  8. Leave the mixers running and pour in both syrups.
  9. Gradually add the eggs, 1/4 teaspoon salt and vanilla and mix until well combined.
  10. Stir in the nuts and fill into the tart base.
  11. Bake for 10 minutes.
  12. Reduce the heat to 160°C/140°C Fan/Gas 3 and continue baking for 30-35 minutes – the cake should be golden brown but the filling should jiggle a little in the middle when shaken.
  13. Allow to cool in the tin.
  14. You will probably need to run a knife along the side of the pan to loosen the cake.
  15. Serve with whipped cream.
