  • 2 large leeks, cleaned (with a little green) and halved lengthwise and crosswise, then washed
  • 3 large carrots, peeled and halved lengthwise and crosswise
  • 6 small or 2 medium beets, peeled, cut into thick slices
  • 1 lamb bouillon cube
  • 4 tsp plain flour
  • 100 ml dry white wine
  • about 12 thick continental spring onions, white and green parts
  • several sprigs of flat-leaf parsley and lemon thyme
  • 3 tablespoons cream or whipped cream
  • 1 unwaxed lemon
  • chopped fresh parsley and/or lemon thyme

If you can’t get lamb shank steaks, buy a 3-pound boneless leg of lamb and cut it into six pieces.

Preparation steps

  1. Halve the lamb steaks and trim off any excess fat.
  2. Heat 1 tablespoon oil over medium heat in a large ovenproof casserole dish with a tight-fitting lid.
  3. Roast the lamb until it “freezes” – it should be lightly colored all over but not charred.
  4. Bring a kettle of water to the boil.
  5. Place the lamb on a plate and rinse the casserole.
  6. Add the vegetables (but not the scallions) and cover with boiling water.
  7. Season and cook for 15 minutes, then drain in a colander over a bowl.
  8. Measure out 450 ml of the cooking liquid, crumble in the stock cube and stir until it dissolves.
  9. Wipe the fat from the lamb with paper towels.
  10. Heat remaining oil in Dutch oven over medium-high heat.
  11. Add the lamb, season and dust with flour, then stir for a minute.
  12. Add broth, wine, onions and herbs and bring to a simmer.
  13. Turn the heat to low, cover, and simmer gently for 1 hour, stirring a few times.
  14. Add the vegetables and stir well, cover and cook for another 15-20 minutes, or until the potatoes are tender. (Let cool and then freeze for up to 1 month or refrigerate for up to 24 hours.)
  15. Remove the meat and vegetables to a warm serving bowl.
  16. Over low heat, stir in the cream in the casserole dish, rub in the lemon peel and squeeze out the juice.
  17. Adjust the seasoning, spoon over the lamb and vegetables, sprinkle with herbs and serve.
