Ingredients

  • 2 tbsp olive oil
  • 140g pack of diced pancetta
  • 1 kg braised steaks, diced
  • 4 tbsp flour
  • 1 bottle of red wine or 750 ml beef broth
  • 4 sprigs of thyme
  • 600g whole shallots
  • 2 tbsp currant or cranberry jelly
  • 1 tbsp red wine vinegar
  • 1 egg yolk
  • 350g plain flour
  • 1 tbsp English mustard powder
  • 200g butter, frozen

Preparation steps

  1. Heat half of the olive oil in a large pan and fry the pancetta for a few minutes until golden brown. Remove with a slotted spoon and set aside.
  2. Dust the steak with flour and then brown it in the hot pancetta oil. To avoid overcrowding the pan, do this in two batches. Return the entire steak to the pan along with the pancetta.
  3. Add wine and thyme and bring to the boil. Partially cover with a lid, leaving about 1cm gap, and simmer for 2 hours, until the meat is tender. Stir occasionally. Once the sauce has thickened and thickened slightly, cover the pan completely.
  4. In the meantime, preheat the oven to 200°C/180°C fan/gas. 6. Mix the remaining olive oil and shallots. Spread on a baking sheet and roast for 45 minutes, until soft and golden brown.
  5. For the dough base, sift the flour and mustard into a large bowl and then roughly grate in the frozen butter. Drizzle with 6-8 tablespoons of cold water and stir gently until a stiff dough forms. Wrap and chill for 30 minutes.
  6. Stir the roasted shallots, jelly and vinegar into the beef, season and then pour into a 2-quart cake tin. Increase the oven temperature to 220°C/200°C fan/gas 7.
  7. Roll out the dough and place it over the filling. It’s a good idea to use a pie funnel to support the dough and prevent it from getting soggy in the middle, but it’s not absolutely necessary. Mix the egg yolk with a little salt and brush the dough with it. Bake for 30 minutes or until the dough is crisp and golden brown and the filling is hot throughout.
