- 1 kg of mussels from rope farming
- 25g unsalted butter
- 2 small red onions, thinly sliced
- 1 garlic clove, minced
- 150 ml dry apple cider
- 2 tsp finely chopped sage
- 150 ml half-fat crème fraîche
