Ingredients

  • 25 g dried porcini mushrooms, soaked in 250 ml water for 30 minutes, reserving the soaking liquid
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 150g pack of young mushrooms, finely chopped
  • 2 sprigs of thyme or lemon thyme, leaves removed and chopped
  • 175 ml white wine
  • 4 chicken breast fillets with skin
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 celery sticks, finely chopped
  • 1 small onion, finely chopped
  • 140g risotto rice
  • 600 ml hot chicken stock
  • 2 sprigs of thyme or lemon thyme, leaves removed and chopped
  • Juice and zest of half a lemon
  • 50g Parmesan, grated, plus 1 tbsp extra for serving

Preparation steps

  11. Add the celery and onion then cook over medium heat until softened, 5 minutes.
  12. Add the rice, coat well with oil and cook for 1 minute.
  13. Add the broth a ladle at a time, stirring with each addition until absorbed.
  14. Continue adding the broth and stirring until the risotto oozes and thickens – about 20 minutes.
  15. Stir in thyme, lemon juice, lemon zest and Parmesan.
  16. When the chicken is cooked and golden brown, remove from the oven.
  17. Divide the risotto onto serving plates, sprinkle with a little Parmesan and top with a chicken breast.
  18. Pour the pan juices from the chicken pan over the top and serve immediately.
