- 140g Gorgonzola cheese, cut into 4 pieces
- 225g bag of prepared young leaf spinach

- Place the mushrooms in a large bowl with the shallot, garlic and 2 tablespoons of oil.
- Drizzle the bread with a little olive oil, grill until lightly toasted, then set aside.
- Grill the mushrooms for 4-5 minutes on each side until cooked through.
- Divide the cheese among the individual mushroom cavities.
- Place the mushrooms on the toast, cheese side up.
- Place back under broiler and cook until cheese melts and bubbles.
