  • 140g Gorgonzola cheese, cut into 4 pieces
  • 225g bag of prepared young leaf spinach

  2. Place the mushrooms in a large bowl with the shallot, garlic and 2 tablespoons of oil.
  3. Drizzle the bread with a little olive oil, grill until lightly toasted, then set aside.
  4. Grill the mushrooms for 4-5 minutes on each side until cooked through.
  5. Divide the cheese among the individual mushroom cavities.
  6. Place the mushrooms on the toast, cheese side up.
  7. Place back under broiler and cook until cheese melts and bubbles.
  8. Add the spinach to the marinade bowl with the remaining oil and season to taste.
  9. Serve the spinach with the mushroom toasts.
