Ingredients
- 2 tbsp olive oil
- 2 pieces of chicken thighs
- 1 onion, sliced
- 1 lemon
- 1 garlic clove, crushed
- small piece of ginger, peeled and finely chopped
- 2 tsp chermoula spice mix
- 225 ml chicken or vegetable stock (one cube is enough)
- 1 tsp clear honey
- a handful of green olives
- chopped coriander for serving
Preparation steps
- Place a large skillet with 1 tablespoon oil over medium heat.
- Season the chicken lightly and fry, skin side down, until golden brown on one side, about 5 minutes.
- Turn over and add the onion to the pan.
- Cook for another 5 minutes, until the onion is soft and the chicken is golden brown all over.
- In the meantime, halve the lemon and quarter one half.
- Finely chop a quarter (without peel) and place in a mortar or small blender.
- Mix with remaining oil, garlic, ginger and chermoula to form a paste.
- Add a dollop to the skillet and cook until you can smell the spices, 1 minute more.
- Pour chicken or vegetable broth and honey over it and bring to the boil.
- Reduce the heat, cover, and cook until the chicken is cooked through and the sauce has thickened and become glossy, 20 to 30 minutes (you may need to cover the pan for the last 5 minutes of cooking).
- Stir in the olives and squeeze the juice of half a lemon over them.
- Sprinkle with coriander and serve with couscous or bread.
