Ingredients

  • 2 small sweet potatoes, cut into pieces
  • 2 red onions, roots intact, cut into wedges
  • 1 large parsnip, peeled and cut into pieces
  • 2 large carrots, peeled and cut into pieces
  • 1 tbsp ras el hanout
  • 1 tbsp olive oil
  • 100g bag of baby spinach
  • 110g pack of pomegranate seeds
  • 50 g light feta cheese, crumbled
  • 4 tbsp balsamic vinegar

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas mark 6 and line a large baking tray with baking paper.
  2. In a large bowl, toss all the vegetables with Ras el Hanout, olive oil, salt and pepper.
  3. Arrange the mixed vegetables in a single layer on the baking sheet.
  4. Roast the vegetables, turning once, for 40 minutes or until tender and beginning to char.
  5. After cooking, allow the roasted vegetables to cool for 10 minutes.
  6. Mix the cooled roasted vegetables with the spinach leaves, pomegranate seeds, feta and vinegar.
