Moroccan meatballs with eggs

Ingredients

  • 1 onion, finely chopped
  • 3 tbsp olive oil
  • 50g fresh breadcrumbs
  • 250g pack of lean minced lamb
  • ½ tsp ground cinnamon
  • 5 eggs
  • 2 garlic cloves, sliced
  • 1 zucchini, cut into thick slices
  • 2 x 400g cans of chopped tomatoes
  • 2 tsp honey
  • ½-1 tsp Ras-el-Hanout spice mix
  • 20g coriander, mostly chopped
  • 400g can of chickpeas, rinsed and drained

Preparation steps

  1. Fry the onion in 1 tablespoon oil until soft, then let cool.
  2. Mix the cooled onion with breadcrumbs, minced meat, cinnamon, 1 egg, ½ teaspoon salt and plenty of pepper.
  3. Form about 24 meatballs out of the mixture with wet hands.
  4. In a shallow pan, fry the meatballs in the remaining oil, turning, until evenly browned, about 8 minutes.
  5. Lift the meatballs from the pan and set them aside.
  6. Add the garlic to the oil remaining in the pan and fry until soft.
  7. Add the zucchini and fry for 1-2 minutes.
  8. Add tomatoes, honey, ras el hanout, three quarters of the coriander, spices and a few tablespoons of water.
  9. Mix the ingredients and cook until mushy.
  10. Stir in the chickpeas and return the meatballs to the pan.
  11. Make 4 wells in the sauce and then crack the remaining eggs into the wells.
  12. Cover the pan and cook over low heat until the eggs are set, 4-8 minutes.
  13. Sprinkle the dish with coriander and serve straight from the pan.
