  • 2-3 Bramley apples, peeled, cored and chopped (approx. 250 g pulp)
  • 100g light, soft brown sugar
  • 50 g golden syrup, plus 2 tbsp
  • Butter for greasing
  • 1 spicy apple, e.g. B. Braeburn
  • Squeeze of lemon juice
  • 175g self-raising flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 large egg

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Place the chopped Bramleys in a saucepan, add 100ml water and bring to the boil.
  3. Cover and cook for 5 minutes until apples are very soft.

  5. Add the sugar and 50g syrup, bring to the boil, then set aside and allow to cool.
  6. While you wait, grease the inside of a 3-quart pudding bowl.
  7. Add 2 tablespoons of syrup to the base.
  8. Peel and core the apple, cut half into slices and chop the rest.
  9. Add the lemon juice and place the sliced ​​apple in the syrup at the bottom of the basin.
  10. Sift the flour, bicarbonate of soda and spices into a bowl and add a pinch of salt.
  11. Beat the egg into the juicy apple, add this and the remaining chopped apple to the bowl and stir until smooth.
  12. As you mix it will start to rise a bit.
  13. Quickly turn the dough into the bowl, smooth the surface, then bake for 40-45 minutes or until well risen and a skewer inserted comes out clean.
  14. If the sponge cake browns too quickly, cover with foil towards the end of the cooking time.
  15. Let rest for a few minutes, then turn out onto a plate.
