Mixture of summer fruits

Ingredients
- 250 ml Sauternes or dessert wine
- 250 ml Cabernet Sauvignon or dry red wine
- 50g powdered sugar
- Vanilla pod, split, pulp scraped out
- 12 mint leaves, coarsely chopped, plus sprigs for serving
- 6 basil leaves, coarsely chopped
- 200g fresh raspberries
- ½ Charentais melon, cut into 12 balls
- 200 g fresh ripe strawberries, halved and quartered
- 50g wild strawberries (optional)
- 100ml chilled pink champagne to serve
Preparation steps
- In a large pot, bring the two wines, the sugar and the vanilla pod to the boil.
- Place mint and basil in the center of a small piece of muslin and tie it with string to make a bag. Then add it to the pan with a few twists of freshly ground black pepper.
- Remove from heat and let come to room temperature.
- Remove muslin bag, add raspberries and melon balls.
- Chill for at least 4 hours.
- About 2 hours before serving the fruit, add the strawberries and, if necessary, wild strawberries to the syrup.
- Serve in a large serving bowl or four individual bowls.
- Just before serving, pour about 2 tablespoons of pink champagne over the top.
