Ingredients

  • 140g pistachios
  • 250g powdered sugar
  • 2 egg whites
  • 100g low-fat soft cheese
  • 25 g dark chocolate with 70% cocoa content

Preparation steps

  1. Preheat the oven to 160°C/fan 140/gas 3.

  3. Mix with 175g more powdered sugar in a large bowl.
  4. Beat the egg white until stiff, add the remaining 50 g of powdered sugar and beat again until foamy.
  5. Fold the egg white mixture into the nut mixture.
  6. Pour the mixture into a piping bag fitted with a 1cm nozzle.
  7. Squeeze out dollops of the mixture the size of a 10p coin, spaced well apart.
  8. Prick the pointed tips with a wet finger.
  9. If you don’t have a piping bag, just cut the end of a sandwich bag and use that.
  10. Let dry for 30 minutes.
  11. Bake for 12-15 minutes until the dough has risen.
  12. Allow to cool on the paper.
  13. Mix the cream cheese with the chocolate.
  14. Use the cream cheese and chocolate mixture to assemble the macaroons.
  15. Will keep for 1 day filled or up to 3 days unfilled in an airtight container.
