Ingredients
- 500g pack of shortcrust pastry
- 2 cooked chicken breasts, shredded
- 85g peas, fresh or frozen
- ½ bunch of asparagus, cleaned and cut into bite-sized pieces
- 100g crème fraîche
- 1 egg, beaten
Preparation steps
- Roll out the dough until it is slightly thinner than a £1 coin.
- Cut out 8 x 9 cm circles and use them to line 8 holes in a muffin tin.
- Divide the chicken, peas and asparagus between the tins, season and then spread 1 tablespoon of crème fraîche over it.
- Cut out 8 x 7 cm circles to form the cake tops.
- Lightly brush the edges of the cake layers with egg, place each cake layer on the cake and press it into the filling.
- Pinch the sides together to seal.
- Let rest in the fridge for 30 minutes, or up to 2 days if made in advance.
- Preheat the oven to 200°C/fan 180°C/gas 6.
- Brush the tops with more egg and bake for 30-35 minutes or until the pastry is crisp and golden brown.
- Serve warm or let cool.
