Ingredients

  • flour, for dusting
  • 500g puff pastry
  • 2 Granny Smiths apples, peeled, cored and diced
  • 140g fresh cranberries (or frozen and thawed)
  • ½ tsp cinnamon
  • ½ tsp spice mixture
  • 1 tbsp golden powdered sugar, plus a little sugar for sprinkling
  • Zest of half a lemon
  • 411g jar of minced meat
  • 1 egg, beaten
  • Whipped cream or brandy cream for serving

Preparation steps

  1. Preheat the oven to 200°C/180°C fan/gas 6 and place a baking tray in to heat.
  2. Lightly flour a work surface.
  3. Roll out the puff pastry into a 30 x 45 cm rectangle.
  4. Place the rolled out dough on baking paper.
  5. Mix apples and cranberries in a bowl.
  6. Add cinnamon, mixed spice, sugar, lemon zest and minced meat to the bowl with the apples and cranberries.
  7. Mix all ingredients together well.
  8. Arrange the dough in front of you with the short edge facing you.
  9. Spread the minced meat mixture in a line about 12cm wide down the center of the dough.
  10. Leave 2 cm of dough at the top and bottom of the minced meat line.
  11. To create the lattice pattern, start at the top of the dough.
  12. Cut a 1.5-2 cm wide horizontal strip of dough on both sides of the minced meat filling.
  13. Make sure the strips are still attached to the filling.
  14. Cut out a 0.5 cm wide strip of dough about 1.5 cm from the filling and remove it.
  15. Then cut another strip of dough 1.5-2 cm wide, creating a pattern that resembles the teeth of a comb.
  16. Repeat this cutting method until you reach the bottom of the dough.
  17. Cut out the last strip and remove it.
  18. Fold the top and bottom flaps of dough up and over the filling.
  19. Starting from the top, fold the strips of dough diagonally over the filling.
  20. Continue folding the strips until you reach the bottom, creating a grid pattern.
  21. You can now refrigerate the tart for up to 2 days or freeze it for up to 2 months.
  22. Brush the tart with beaten egg and sprinkle with additional sugar.
  23. Using the baking paper, transfer the tart to the hot baking tray.
  24. Bake for 20-25 minutes or until top is golden brown.
  25. If baking from frozen, add 10-15 minutes to the baking time.
  26. Allow to cool for 5 minutes before serving with whipped cream or brandy cream.
