Mexican rice with chipotle pork and avocado salsa

Ingredients

  • 400g pork shoulder steak, cut into 3cm pieces
  • 2 tbsp chipotle paste
  • 2 teaspoons each of ground cumin and smoked paprika powder
  • 1 tsp sugar
  • 1 tsp vegetable oil
  • 100g basmati rice
  • 400g canned black beans, drained and rinsed
  • 1 avocado, cut into pieces
  • 1 small red onion, finely chopped
  • a handful of coriander, coarsely chopped
  • 1 lime, ½ juiced, ½ slices
  • 2 tablespoons pickled jalapeños, sliced, rinsed

Preparation steps

  1. Preheat the oven to 180°C/160°C fan/gas 4.
  2. Mix the pork with 1 tablespoon chipotle paste, cumin, paprika, sugar and some spices.
  3. Spread the pork on a baking sheet and drizzle with vegetable oil.
  4. Bake for 20 minutes until soft.
  5. Cook the rice according to package directions until just cooked through, then drain.
  6. Return the cooked rice to the pan and add the beans.
  7. Keep warm with the lid closed.
  8. In a small bowl, combine the avocado with the red onion, most of the cilantro, the remaining chipotle paste and the lime juice.
  9. Season the avocado salsa with salt and pepper.
  10. Serve rice and beans with cooked pork, avocado salsa, jalapeño, lime wedges and remaining cilantro.
