Ingredients

  • 1 chicken breast
  • 1 tsp chipotle paste
  • 1 lime, juiced
  • 1-2 slices of cheese
  • 1 brioche bun, divided
  • ½ avocado
  • 2 cherry tomatoes, chopped
  • 3-4 pickled jalapeño slices, chopped
  • ½ small garlic clove, finely grated

Preparation steps

  1. Place the chicken breasts between two pieces of cling film and, using a rolling pin or skillet, pound them until they are about 1cm thick.
  2. Mix the chipotle paste with half of the lime juice and spread over the chicken.
  3. Heat a grill pan over high heat.
  4. Once hot, cook the chicken for 3 minutes on each side until cooked through, adding the cheese for the last 2 minutes.
  5. Place the bun, cut side down, in the grill pan and toast it lightly.
  6. Season chicken.
  7. In the meantime, mash the avocado with the remaining lime juice.
  8. Stir in the cherry tomatoes, jalapeño and garlic and season with a little salt.
  9. Spread the avocado mixture on the bottom of the bun.
  10. Add the cooked chicken to the avocado mixture.
  11. Place the top of the bun on top of the chicken to complete the burger.
