Ingredients
- up to 6 tablespoons sunflower oil
- 4 kg of braised beef
- 4 white onions, sliced
- 4 tbsp chipotle paste
- 8 garlic cloves, crushed
- 50g ginger, grated
- 1 tbsp ground cumin
- 2 tsp ground cinnamon
- 1 tbsp flour
- 2l beef broth
- 3 x 400g cans of chopped tomatoes
- 1 tbsp dried oregano
- 5 x 400g cans of pinto or kidney beans, drained
Preparation steps
- Heat a small drizzle of oil in an extra-large ovenproof bowl.
- Fry the meat in batches, adding a drop of oil if necessary.
- Remove the meat from the mold and set aside.
- Add 1 tablespoon of oil to the mold.
- Add the onions and cook for 7-10 minutes or until caramelized.
- Mix chipotle paste, garlic, ginger, cumin, cinnamon and flour with the onions.
- Let it cook for a few minutes.
- Gradually add the broth and mix with the other ingredients, stirring constantly.
- Add tomatoes and oregano to the bowl.
- Season with salt and pepper.
- Let the mixture simmer for 10 minutes.
- Add the beef to the bowl.
- Cover and simmer very gently for about 1 hour and 45 minutes, or until the beef is tender.
- Remove the lid and place the beans in the bowl for the final 15 minutes.
- If the sauce is thin, let it simmer uncovered for another 5-10 minutes.
- Adjust seasoning if necessary before serving.
- Serve the Mexican beef chili with garlic bread and salsa.
