Ingredients
- 2 x 400g/14oz cans of kidney beans, rinsed and drained
- 100g breadcrumbs
- 2 tsp mild chili powder
- small bunch of coriander, stems and leaves chopped
- 1 egg
- 200g can of fresh salsa
- 150 ml low-fat natural yogurt
- Juice ½ lime
- 6 whole wheat burger buns, sliced avocado, sliced red onion and lettuce leaves to serve

- Grill the burgers for 4-5 minutes on each side until golden brown and crispy.
- If cooking from frozen, bake at 200°C/180°C fan/gas mark 6 for 20-30 minutes until heated through.
- While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and black pepper.
- Divide the buns in half.
- Spread the yogurt mixture on the bottom halves of the buns.
- Top each bun with lettuce leaves, avocado, onions, a burger, another dollop of lime yogurt and some salsa.
- Serve and enjoy!
