  • 250 g unsalted butter, at room temperature
  • ½ tsp vanilla extract
  • 1 teaspoon red food coloring (I used Sugarflair)
  • 225g flour
  • 35g cocoa powder
  • 85g powdered sugar
  • 30g cornstarch
  • 50 g unsalted butter, at room temperature
  • 125g powdered sugar
  • 1 tsp vanilla bean paste
  • 50 g full-fat cream cheese
  • ¼ tsp lemon extract (I used Nielsen-Massey)

Preparation steps

  1. Preheat the oven to 160°C/140°C fan/gas 3 and line 2 baking trays with baking paper.
  2. Place butter and vanilla in a large bowl and beat until soft and creamy.
  3. Add the coloring and stir.
  4. Sift the remaining cookie ingredients into the bowl and mix until a smooth dough forms.
  5. Using your hands, roll the dough into small balls (I weigh them so each cookie is the same size, 20g each), then place 10 on each prepared baking sheet, leaving a few inches between each cookie .
  6. Using a fork dipped in flour, press down on each cookie, leaving an indentation and flattening the cookies slightly.
  7. Place the trays in the fridge for about 15 minutes or until the cookies are slightly firmer, then bake for 20-25 minutes.
  8. Let them cool on the baking sheets for 5 minutes before removing them to a wire rack to cool completely.
  9. For the filling, place the butter, powdered sugar and vanilla in a large bowl and mix until fluffy.
  10. Add the cream cheese and lemon extract and beat until well combined – the lemon extract will give the filling an extra boost of flavor to help it stand out against the cookies.
  11. Once the cookies have cooled, place the filling in a piping bag fitted with a plain round tip and pipe the filling onto half of the cookies, sandwiching them along with a second cookie in between.
