- 250 g unsalted butter, at room temperature
- ½ tsp vanilla extract
- 1 teaspoon red food coloring (I used Sugarflair)
- 225g flour
- 35g cocoa powder
- 85g powdered sugar
- 30g cornstarch
- 50 g unsalted butter, at room temperature
- 125g powdered sugar
- 1 tsp vanilla bean paste
- 50 g full-fat cream cheese
- ¼ tsp lemon extract (I used Nielsen-Massey)
- Preheat the oven to 160°C/140°C fan/gas 3 and line 2 baking trays with baking paper.
- Place butter and vanilla in a large bowl and beat until soft and creamy.
- Add the coloring and stir.
- Sift the remaining cookie ingredients into the bowl and mix until a smooth dough forms.
- Using your hands, roll the dough into small balls (I weigh them so each cookie is the same size, 20g each), then place 10 on each prepared baking sheet, leaving a few inches between each cookie .
- Using a fork dipped in flour, press down on each cookie, leaving an indentation and flattening the cookies slightly.
- Place the trays in the fridge for about 15 minutes or until the cookies are slightly firmer, then bake for 20-25 minutes.
- Let them cool on the baking sheets for 5 minutes before removing them to a wire rack to cool completely.
- For the filling, place the butter, powdered sugar and vanilla in a large bowl and mix until fluffy.
- Add the cream cheese and lemon extract and beat until well combined – the lemon extract will give the filling an extra boost of flavor to help it stand out against the cookies.
- Once the cookies have cooled, place the filling in a piping bag fitted with a plain round tip and pipe the filling onto half of the cookies, sandwiching them along with a second cookie in between.

Health Benefits of Red Velvet Melting Moments
Not only are Red Velvet Melting Moments a delicious treat, but they also offer some surprising health benefits. Let’s take a closer look at the ingredients and the possible positive effects they can have on your well-being.
1. Unsalted butter
Unsalted butter is the base of the recipe and gives the cookies a rich and creamy texture. Although butter should be consumed in moderation, it contains essential fatty acids and fat-soluble vitamins. These nutrients are important for brain function, hormone production and overall cellular health.
2. Vanilla extract and vanilla bean paste
Both vanilla extract and vanilla bean paste give Red Velvet Melting Moments a delicious taste. Vanilla is known for its antioxidant properties, which can help reduce inflammation in the body. In addition, it is believed that vanilla can have a calming effect on the nervous system and provide a feeling of relaxation.
3. Food coloring in red paste
The bright red color of these cookies is achieved by red food coloring. Even though coloring itself doesn’t offer any particular health benefits, studies have shown that visual stimulation can increase appetite and contribute to a more satisfying eating experience.
4. Plain flour and cocoa powder
The combination of flour and cocoa powder forms the base for the cookies. Although these ingredients do not have any exceptional health benefits on their own, it is worth noting that cocoa powder contains antioxidants and may have potential cardiovascular benefits when consumed in moderation.
5. Powdered sugar and cornstarch
To give the cookies a smooth and velvety consistency, powdered sugar and cornstarch are used. Due to their high sugar content, it is important to consume these ingredients in moderation. However, cornmeal is gluten-free, making these cookies suitable for those with gluten intolerance.
6. Cream cheese and lemon extract
The frosting for Red Velvet Melting Moments consists of cream cheese and a touch of lemon extract. Cream cheese provides a creamy and tangy taste while adding some protein and calcium to the dessert. Lemon extract provides a refreshing touch and may contain beneficial compounds such as vitamin C and antioxidants.
Overall, while Red Velvet Melting Moments are undoubtedly a treat for your taste buds, they also offer some potential health benefits. Remember that moderation is key when enjoying these treats, as the added sugar and fat content should be consumed as part of a balanced diet.
