Ingredients

  • 250 g strong cheddar, grated
  • 4 tomatoes, roughly chopped
  • 1 green or red chili pepper, deseeded and finely chopped
  • ½ large bunch of coriander, leaves roughly chopped
  • 8 flour tortillas (we used Discovery)
  • Oil, for brushing

Preparation steps

  1. Put the cheese, tomatoes, chili and coriander leaves in a bowl with some spices and mix well.
  2. Heat the tortillas in the microwave according to the package instructions – this will make them more pliable.
  3. Spread the cheese mixture on half of each tortilla.
  4. Fold the other half over to make 8 crescents, then press to seal.
  5. Brush the tops with a little oil.
  6. Sit oil side down on a hot spot on the grill.
  7. Cook for a few minutes until crispy and golden brown.
  8. Brush the uncooked side with oil.
  9. Turn for a few more minutes.
  10. Cut into wedges.
  11. Place on a platter while you prepare the rest.
