Ingredients

  • 500g lean minced beef
  • 1 small onion, finely chopped
  • 1 eating apple, peeled and finely chopped (or grated)
  • 1 red bell pepper, deseeded, deseeded and finely chopped
  • Leaves of 2 sprigs of oregano or 1 tsp dried
  • Flour for brushing
  • Olive oil, for frying
  • 1 small onion, finely chopped

  • 4 x 225g packs of vine cherry tomatoes, halved
  • a dash of Worcestershire sauce
  • a dash of soy sauce
  • a handful of fresh basil leaves

Preparation steps

  1. Mash the meat in a bowl with a spoon
  2. Add onion, apple, red pepper and oregano (and season if you like)
  3. Mash again to mix everything together
  4. Mix well with your hands until the mixture is sticky
  5. Divide the mixture into 16 smaller balls
  6. Cool the meatballs in the refrigerator while you make the sauce
  7. You can make the meatballs two days in advance or freeze them to this point
  8. Make the sauce
  9. Sauté the onion in the oil in a medium-sized pot
  10. Add the tomatoes and simmer gently, uncovered, for about 20 minutes
  11. Add the remaining ingredients except the basil and cook slowly for another 15-20 minutes
  12. Add basil and a splash of water from the kettle
  13. Pour the contents of the pan into the food processor and process until smooth
  14. Preheat the oven to 190°C/fan 170°C/gas 5
  15. Carefully roll the meatballs in flour
  16. Heat a spoonful of oil in an ovenproof non-stick frying pan
  17. Wipe out the pan with paper towels
  18. Add the meatballs and cook gently and slowly over low heat for 10 minutes, turning once with tongs
  19. (You may need to do this in batches if your pan is not very large.)
  20. Drain off excess fat
  21. Pour in the sauce
  22. Cook in the oven for 15 minutes
  23. Serve with pumpkin puree
